Black Bean Soup

This soup is delicious & hearty. I usually make rolls to go alongside it but my husband is just as happy to eat this alone.

What you need:
2 large celery, diced
3 medium carrots, diced
1 onion
2 garlic cloves
1 teaspoon of fresh ginger
*(if you have it handy)
2 cans of black beans, undrained
1 can of white beans, undrained
3 cups of water
2 tbsp soy sauce

What you do:

Sauté onions & garlic in olive oil (1 turn of the pan) until soft (about 5 min).
Add chopped celery & carrots and cook for about 2 minutes, then add ginger (if you want here).
A sprinkle of salt & pepper can be added at this point if you so desire.
Add the cans of beans & 3 cups of water. Bring to a boil.
Turn heat to medium/low and summer for about 20 minutes.
Add your soy sauce, allow to cook for another 2 minutes, serve & enjoy!

This is one of our go to vegan dinners. It is a delicious, protein packed dinner that non-vegs & vegs alike will love!
